Pull ribs out and give them 5 to 10 minutes to chill. Slice into portions and dig in.

Turn on your oven’s broil setting as high as it goes. Broil ribs for 5 minutes till the sauce gets bubbly and sticky—watch closely so nothing burns.

Carefully open up the foil, pour out any extra juice if there is, then brush a thick layer of BBQ sauce all over.

Bake ribs in the middle of the oven for 3 hours. The meat should be super tender and bones should slide right out.

With meat side facing up, snugly wrap each rack in foil and lay them on a baking sheet.

Massage the dry rub all over both sides of your ribs, make sure it’s on there good.

Rinse ribs under cold water and pat dry with kitchen towel. Peel off the silver skin from the back using a paper towel and a teaspoon for grip.

Mix up all the dry rub stuff in a small bowl. Stir it so everything’s blended, set it aside for now.

Heat oven up to 135°C using regular top and bottom heat.
