Wash barley thoroughly, drain, and put it aside.

Warm up some olive oil in a large pot over medium heat. Toss in the chopped onion and garlic. Sprinkle with a little salt and pepper, and cook until the onion looks clear.

Stir in the Italian seasoning, garlic powder, and onion powder with everything in the pot.

Throw in the chicken, carrots, celery, and rinsed barley. Give it all a quick mix.

Pour in the chicken stock, crank up the heat to bring it to a boil, then drop it to low. Taste and adjust if needed. Cover and let everything cook for half an hour until the barley's tender.

Give it one final taste and add more salt or pepper if you think it’s needed.
