Bang Bang Skewers (Printable Recipe Version)

Chicken thighs cooked hot then brushed all over with spicy-sweet bang bang sauce and a slick of warm honey on top.

# Ingredients You’ll Need:

→ Chicken

01 - Cut boneless, skinless chicken thighs (900–950 g) into bite-size, 2.5 cm cubes

→ Marinade & Seasoning

02 - 1 teaspoon garlic powder
03 - 0.5 teaspoon fine sea salt
04 - 1 teaspoon ground black pepper
05 - 0.5 teaspoon cayenne pepper
06 - 15 ml extra virgin olive oil
07 - 30 ml hot honey (totally optional)
08 - 1 teaspoon paprika

→ Bang Bang Sauce

09 - 150 ml Thai sweet chili sauce
10 - 240 g mayonnaise
11 - 60 ml Sriracha or less if you want it milder
12 - 40 ml freshly squeezed lime juice

# Steps to Make It:

01 - Toss the chicken cubes with olive oil, paprika, garlic powder, pepper, cayenne, salt, and (if you like sweet heat) hot honey in a big bowl. Make sure every piece is coated well.
02 - Soak wooden skewers in a container of water at least 15 minutes. This keeps them from burning or catching fire when you cook.
03 - Stick the marinated chicken onto your skewers, going about two-thirds up each skewer.
04 - Whisk together Sriracha, sweet chili sauce, mayo, and lime juice in another bowl until smooth. Split this sauce in half and save some for dipping later.
05 - Put the skewers on your baking sheet. Slather on half the Bang Bang sauce using a brush or spoon, covering every chicken piece you can.
06 - Pop the skewers on a preheated grill (medium-high). Cook for 15–20 minutes, turning every so often, until they're glazed up and the chicken hits 74°C inside. Brush on more sauce as they cook.
07 - If you prefer, lay out skewers in your air fryer basket (just one layer). Air fry at 200°C for 10–12 minutes, flipping halfway, until browned and fully cooked.
08 - Once done, move the skewers to a plate. Add that leftover Bang Bang sauce and maybe more hot honey on top. Dig in while they're still hot!

# Extra Information:

01 - Dial down the spice by skipping cayenne, cutting back Sriracha, and leaving out the hot honey.
02 - Letting the chicken hang out in the marinade for an hour makes it even better.
03 - Chicken breasts work instead of thighs if that's what you've got.
04 - Pop extra cooked skewers in an airtight box in the fridge and they'll last about 4 days.
05 - Need to warm leftovers? Three minutes in the air fryer at 175°C does the trick.
