Bang Bang Chicken Rice (Printable Recipe Version)

Tender chicken, flavorful rice, scrambled eggs, and spicy bang bang sauce all in one meal.

# Ingredients You’ll Need:

→ Chicken

01 - 240 ml Bang Bang sauce, split in two parts
02 - 680 g boneless skinless chicken breast, diced into about 1-inch cubes
03 - 1 teaspoon garlic powder
04 - 1 tablespoon vegetable oil
05 - 1 teaspoon kosher salt
06 - 1 teaspoon paprika
07 - 0.5 teaspoon black pepper

→ Fried Rice

08 - 2 tablespoons sesame oil, split over two uses
09 - 4 large eggs, beaten
10 - 60 ml diced green onions, plus extra for sprinkling
11 - 1 large white onion, chopped up
12 - 2 big carrots, diced
13 - 0.5 teaspoon kosher salt
14 - 1 teaspoon minced garlic
15 - 60 g melted unsalted butter
16 - 650 g long grain rice, cooked, then cooled down
17 - 2 tablespoons soy sauce
18 - 50 g frozen peas
19 - 1 teaspoon lemon juice

# Steps to Make It:

01 - Toss chicken cubes with oil, salt, paprika, garlic powder, and pepper until coated. Heat air fryer to 200°C. Pop chicken in so it's in a single layer. Cook it for 11 to 12 minutes. Flip chicken halfway through. You want it golden and completely cooked inside (hit 74°C in the middle). Keep it warm under foil in a bowl.
02 - Pour a tablespoon of sesame oil into a big pan. Turn the heat up high. Add the beaten eggs, sprinkle some salt, and gently scramble them until they're soft. Take eggs out and set aside.
03 - Lower the heat a little, then add the rest of the sesame oil. Throw in the green onions, onions, and carrots. Stir everything around for about 5 minutes so the carrots turn soft. Now add the garlic, stir for another minute.
04 - Drop in your cooled-down rice. Break up the clumps with a spoon. Mix it all up with the veggies. Stir it every so often for 2 to 3 minutes till the rice is warmed through.
05 - Add the scrambled eggs, melted butter, peas, lemon juice, and soy sauce. Mix everything carefully. Let it get hot and come together for another 2 or 3 minutes.
06 - Coat your cooked chicken in half of the Bang Bang sauce. Spoon the fried rice into bowls. Top with chicken. Drizzle the leftover sauce on top. Throw on some extra green onions if you like.

# Extra Information:

01 - Let the rice cool for at least an hour for best results. This keeps it from turning sticky when you stir-fry.
