Lemon Butter Chicken (Printable Recipe Version)

Chicken baked until golden in a buttery lemon sauce with lots of parmesan and herbs. It’s a real feel-good dinner.

# Ingredients You’ll Need:

01 - 10 bone-in chicken thighs or drumsticks, extra fat trimmed away

→ Seasonings

02 - 1 tablespoon chicken seasoning blend (Montreal or any chicken spice mix)
03 - 2 teaspoons kosher salt
04 - 1 tablespoon smoked paprika

→ Sauce

05 - 80 ml heavy cream
06 - 125 g red onion, chopped fine
07 - 2 tablespoons butter
08 - 100 g Parmesan cheese, freshly grated
09 - 15 g fresh parsley, sliced
10 - 1 tablespoon garlic, chopped
11 - 240 ml chicken broth
12 - 0.5 teaspoon crushed red pepper flakes
13 - 1 tablespoon lemon juice

# Steps to Make It:

01 - Turn on the broiler. Set chicken skin-up under the broiler till it crisps and turns nice and golden. Spoon sauce from the dish over each piece, then just dig in while it's hot.
02 - Lay out all the seasoned chicken in a baking dish and pour the sauce chilled over everything. Slide the dish uncovered into a 190°C oven, baking for 1 hour, 45 minutes. Flip the chicken halfway so both sides cook nice and even.
03 - While you let the sauce cool a bit, sprinkle chicken with salt, paprika, and your chicken spice. Give it all a good toss so every bit is covered.
04 - Mix in the chicken broth and Parmesan to your skillet, stir, then add in the cream. Let everything bubble for a minute, then set it off the heat so it can chill out a bit.
05 - Now toss in lemon juice, add the chili flakes, chopped parsley, and garlic. Mix well and let those flavors hang out together.
06 - Pop your skillet on medium, add the butter, and once it melts toss in onions. Cook them until they smell sweet, like two minutes.

# Extra Information:

01 - Big pieces of chicken take longer, so you might need to let them cook more depending on your oven and their size.
02 - In a rush? Set the oven to 200°C and cook for about 70 minutes. Chicken should be juicy and super tender when done.
03 - Take chicken out of the fridge half an hour before baking so it cooks up better.
04 - This goes amazing with mash or a bed of rice, so you can soak up all that tasty sauce.
05 - Grab a meat thermometer and make sure the chicken gets to 75°C in the thickest part.
