Warm Apple Oatmeal (Print Version)

# Ingredients:

01 - 2 teaspoons vanilla (pure extract works best)
02 - 1½ cups milk, room temp
03 - ¼ cup maple syrup (pure works best)
04 - 3 tablespoons melted butter or coconut oil
05 - ¼ teaspoon finely ground nutmeg
06 - 1 teaspoon cinnamon, ground
07 - 2¼ cups oats, old-fashioned
08 - ¼ teaspoon salt
09 - 1 teaspoon baking powder
10 - ½ cup applesauce (unsweetened) or 2 large eggs
11 - 1 cup diced apples; split into ¾ cup and ¼ cup

12 - ½ teaspoon cinnamon
13 - 2 tablespoons white sugar

# Instructions:

01 - Turn the oven on to 350°F. Take your 8x8 pan, and either line it with parchment or spray it with some nonstick spray so the mixture doesn't cling.
02 - In a mixing bowl, combine old-fashioned oats, baking powder, nutmeg, cinnamon, and salt. Stir until they're evenly dispersed.
03 - Add the milk, melted butter or oil, vanilla, maple syrup, and unsweetened applesauce (or eggs). Stir thoroughly until smooth, then fold in ¾ of the apple chunks. Save the rest for decorating the top.
04 - Transfer everything to the pan you prepped. Scatter the leftover apple chunks on the surface. Mix the cinnamon and sugar in a tiny bowl, then sprinkle this evenly over the batter.
05 - Put the pan into the oven. Bake for 35–45 minutes, or until the center is firm and the top turns a nice golden shade. Let it rest for a little before digging in.

# Notes:

01 - Want more toppings? Try maple syrup drizzle, a scoop of almond butter, or a spread of apple butter.
02 - It lasts well! Cool it completely first, then cut into squares and store in the fridge (airtight) for up to six days.
03 - Reheat a piece in the oven or microwave for a warm bite.
04 - Freeze slices by sealing them in a plastic freezer bag. Use them within 2 months, and thaw either in the fridge overnight or leave out for a few hours.
