Bacon Jam Spread (Print Version)

# Ingredients:

01 - 1 lb bacon, thick slices, chopped into bits.
02 - 2 big yellow onions, chopped finely.
03 - 4 garlic cloves, chopped small.
04 - 1/3 cup packed brown sugar.
05 - 1/4 cup vinegar made from apple cider.
06 - 1/4 cup vinegar, balsamic kind.
07 - 2 teaspoons fresh thyme leaves.

# Instructions:

01 - Slice bacon into little bits.
02 - Cook chopped bacon in a big pan on medium-high until crisp. Move to a plate.
03 - Leave 2 tablespoons of bacon fat in the pan. Toss in onions and cook until tender and golden.
04 - Throw in garlic and stir it around for about a minute.
05 - Add brown sugar and both types of vinegar. Let it simmer for 5 minutes.
06 - Put bacon back in. Cook for 20 minutes until it thickens up and looks like jam.
